Mango Lassi

Yield: 2 cups, 1 to 2 servings

Ingredients:

1/2 chopped ripe mango
1 cup low-fat plain yogurt
1/4 cup freshly-squeezed orange juice
2 tablespoons Spiced Simple Syrup, recipe follows Pinch
fine salt

Preparation:

Puree all ingredients in a blender until smooth. Refrigerate until ready to serve.


Spiced Simple Syrup:

1/2 cup granulated sugar
1/2 cup water
4 green cardamom pods, cracked
2 allspice berries
1 cinnamon stick
1 whole clove

Preparation:

Put all the ingredients in a small sauce pan, and bring to a boil, stirring occasionally. When sugar is dissolved, remove from heat. Cool, strain, and refrigerate.


Yield: about 2/3 cup
